Cheese
This is everything I know about cheese.
Cheese is from milk fats, curdled, sifted and squished together. Cheeses can be smelly, and they taste good. Even the milk of a goat makes cheese, and then we add the fruit in. Top with honey, on toast. Gourmet.
There are cheese states, and cheese teams. Things that we think are silly or stupid are called, "cheesy" and so it is my nickname for love.
Cheese. It means love.
Cheese comes in oranges and whites. It is rapped in plastic or wax. It is healthy when it is hard or when it is soft. They say cheddar has enzymes that you cannot find in other cheeses. It tastes good, too.
It can take years for Parmesan to mature. You don't want a young parmesan. Blue cheese is good in a baked potato, on salads, on burgers. So is cheddar. So is swiss. And swiss is best for omelets.
Marscapone is a dessert cheese. Feta is greek. Cheesecake is old. New York style, add strawberry.
Swiss has holes in it. Provolone has no flavor but people eat it because it is soft and they think they are getting something for their money because people like something they can feel. Even if it is soft cheese on your teeth.
I have worked in restaurants for years. And that's all I know about cheese.
